I did manage to get outta the bath long enough to do some cooking however. Dinner was a spinach, mushroom, red pepper, onion and cheese quiche with a phyllo dough crust. Salad was lettuce and spinach with feta cheese, roasted pecans, sautéed mushrooms and apples with lemon juice. The spinach was from my garden, a whole lot of organic, very, very local spinach, a bag of which in the supermarket would have cost a lot more. Suck on my (limited) self-sufficiency global capitalism!
